At the beginning of the nineteenth century, the history of Grondona began, an ancient milling factory which within a few decades developed its own production of biscuits for the best shops in the city of Genoa.
A story handed down from generation to generation also thanks to the contribution of grandfather Orlando and his work notes, which have become a reference and a wealth of knowledge. His notes, taken in the little black notebook, made it possible to know the recipes
of tradition, confided in by local housewives, the secrets and observations on the techniques of kneading, cooking and maintaining natural yeast, the White Mother. The same one still used today. It is these traditions that Grondona has been able to combine with refinement
industrial technologies, as well as artisanal care in manufacturing with a significant presence on the distribution level, without losing the meaning of things.
